At Pinky Swear on the Lower East Side, the buzzworthy bar-meets-art-installation, Beverage Director Jon Nutter (of Attaboy and Katana Kitten fame) has introduced the Acrylic Mirror—a tomato martini-style cocktail that trades olive brine for something far more unexpected: house-made pickled cherry tomato brine. Add dry sherry, shallot, and basil to the mix, and what you get is a crystal-clear cocktail that’s vegetal, bright, and unapologetically fresh.
Visually, the Acrylic Mirror is minimalist and modern—just like its surroundings. Pinky Swear itself is a neon-lit surrealist dreamscape, with mirrored phone booths, glowing acrylics, and enough avant-garde energy to make even Dalí blush. The cocktail is a reflection of its namesake art: sleek on the outside, but packed with layered complexity and bold personality.
