Tomatoes have officially left the salad and landed in your cocktail glass. At Pinky Swear on the Lower East Side, the buzzworthy bar-meets-art-installation, Beverage Director Jon Nutter (of Attaboy and Katana Kitten fame) has introduced the Acrylic Mirror—a tomato martini-style cocktail that trades olive brine for something far more unexpected: house-made pickled cherry tomato brine. Add dry sherry, shallot, and basil to the mix, and what you get is a crystal-clear cocktail that’s vegetal, bright, and unapologetically fresh.

Visually, the Acrylic Mirror is minimalist and modern—just like its surroundings. Pinky Swear itself is a neon-lit surrealist dreamscape, with mirrored phone booths, glowing acrylics, and enough avant-garde energy to make even Dalí blush. The cocktail is a reflection of its namesake art: sleek on the outside, but packed with layered complexity and bold personality.

If you’re over spritzes and done with traditional dirty martinis, this is the LES cocktail to try before summer’s over. Tomatoes in cocktails may sound niche, but if this trend takes off, we’ll all be chasing the brine.
