National Caviar Day lands on July 18, and this year New York’s bars and restaurants are skipping the usual tin and blini routine for something more playful. Roe is turning up on burgers, tater tots, toast, and even shaved ice, proof that the city’s favorite luxury indulgence is having an identity crisis in the best possible way. At The Bronze Owl, the Midtown cocktail den on West 33rd Street known for its elevated martini program, comfort food gets a glow up courtesy of Antonius Sturgeon Caviar. The French Onion Creme Fraiche & Caviar pairs onion-infused creme fraiche with the roe and house-made potato chips for dipping, while the Potato Knishes lean into deli nostalgia with a topping of creme fraiche, chives, and caviar. Both dishes are built for sharing alongside one of the bar’s signature martinis, or the newest cocktail, a shaved ice drink prepared tableside in an antique ice crusher.

Chelsea Living Room is throwing a full evening around the holiday, with live music, tableside caviar service, and a roaming cart making the rounds. The Wagyu & Caviar Toast stacks beef tenderloin and premium roe onto buttery brioche, while the Crispy Cheese & Caviar tops smoked mozzarella in herb panko with creme fraiche and chives, and there is even a caviar-finished dessert for guests fully committed to the bit. High above Chelsea at Somewhere Nowhere, the rooftop pool club, restaurant, and lounge atop the Renaissance New York Chelsea Hotel, the new summer menu leans playful with Caviar Bites, crispy puri topped with supreme caviar and creme fraiche, and Tots & Caviar, a shareable plate of crispy tater tots loaded with roe, chives, and creme fraiche. Diners can also upgrade the venue’s signature Somewhere Nowhere Dog, a heritage pork sausage with caramelized onions, grain mustard, pickles, and tarragon, with four grams of caviar on top.
