Step 1:Prepare the  oven;

  • iv. Now, add the diced onion slices and cook while stirring for 5 minutes, or until softened.

  • vi. After that, cook the beef until browned and cooked through, or for further 5 minutes, making sure to break up the meat into pieces. 

  • vii. Thereafter, stir in the tomato paste and diced tomato.

  • viii.  Now, add stock concentrate and ⅓ cup water and season the mixture with salt and pepper before simmering until slightly thickened, or for 2 minutes. 

  • ix. Then, stir in the couscous until thoroughly combined, before turning off the heat.

Step 5: Finish the bell peppers

  • i. Once the bell peppers are done, remove them from the oven.

  • ii. Next, stuff each bell pepper half with as much filling as you desire. 

  • iii. Then, place the bell peppers in the ovenproof pan with the remaining filling, making sure to nestle each stuffed pepper half into the mixture.
