Tacombi x Michelin-Starred Tatemó Popup

 Tacombi, the acclaimed Mexican taqueria, is excited to announce their partnership with the Houston-based Michelin-starred taquería, Tatemó, led by Chef Emmanuel Chavez. Together, Tacombi and Tatemó will offer New Yorkers the opportunity to taste traditional, rich, slow-roasted Barbacoa tacos with prime top round beef sourced from Pat LaFrieda for a limited time only. 

The collaboration begins Wednesday, January 14th with a one-night-only Tatemó popup at Tacombi Flatiron (30 W 24 St, New York, NY 10010); Chef Emmanuel himself will be in the kitchen firing up his famous barbacoa and charred habanero salsas from 7pm-9pm, with fresh tortillas made on-site by Tacombi’s Vista Hermosa brand. Then beginning Thursday, January 15th, the barbacoa tacos will be available at all NYC Tacombi locations for a limited time, with Miami available beginning 1/21. They are $7.49 each.

Marinated in a complex blend of hoja santa, avocado leaf, chile mulato, chile de árbol, and other herbs and spices, this barbacoa is distinguished by the addition of mushroom powder, which lends a savory umami depth. It’s paired with a spicy habanero salsa tatemada—chiles charred on the griddle and balanced with key lime juice and avocado to soften the heat and add brightness. The final touch is a concentrated beef consomé from the slow-cooked meat itself, delivering intense flavor.

Since 2019, Tatemo has been delivering a beautifully pitched and portioned tasting menu experience that focuses on heirloom corn from across Mexico, celebrating the country’s culinary tradition.

Over the past year Tacombi has collaborated with important voices in Mexican taco culture including El Mario Hernandez Alonso from Califa de Leon and Cesar de la Parra from La Once Mil.
